I have seen on the internet where you can buy giant pumpkin seeds. A lot of them are advertised as the seeds that came from so and so which weighed whatever. I guess people sell them like puppies--"these are pure-bred giant seeds"!

I did an archway one year. Just build two tall totems and connect them at the top. You have to skewer the pumpkins at the top through the sides so they sit upright when you bend the rebar.
