Pat out two thin burgers, put a quarter inch thick square of room temperature cheese between them, and then seal the edges and make it nice and round and flat. Then grill it up. I like four minutes or so per side over high heat, unless you made a really giant one, and then a bit longer. I like it served up on a roll with a schmear of mayo, some ketchup and spicy mustard, jalapenos, grilled mushrooms and onions, lettuce and tomato. Beer and a side of oven chips. Niiiiiice!
that sounds good except the mushrooms and the beer, but other then that it sounds good, when should we show up at your place for some?

I'm going to try that with a crumbled bleu cheese.

I think I'll try that, too, only I'll omit the mayonase, jalapino peppers and beer. I'll also have to omit the oven fries as I have a limited stomach capacity.

I'll use the sharpest cheddar chese I can find, and then I'll put it on a hard kaiser roll with katsup, fancy mustard and a tiny hint of horse raddish.

Of course it goes without saying that I'll cook it on the grill. Over lump charcoal.
