NO WAY JOSE!! Simmering is fine for a tiny piece of the corned beef added to the cabbage pot for simmering slowly, BUT corned beef, in order to taste the way I like it, must be BAKED very slowly for 12 hours. No kidding. 11 Hours and 40 minutes in covere pans in a 250 degree overn and 20 minutes uncovered in a 350 degree oven. That's the way to do Corned Beef.

I also don't boil the potatos, either. The potatos are wraped in aluminum foil, and baked out on the grill for 2 hours, flipping each one over at the 1 hour point. The only thing that I boil (actualy I simmer it in the crock pot) is the cabbage with a very tiny piece of conred beef just to add flavor.

I know, that's not the traditional way of preparing Corned Beef and Cabage, and I do an awerful lot of preaching about tradition, but there are few and far between times when newer traditions are called for. Besides, my mother never boiled the corned beef. She allways baked it, so for me, baked Corned Beef is the main family St. Patrick's Day tradition.

Sometimes, I do bake the corn beef... I've never had that on griller. Maybe I would love to try it. ;)

When you bake Corned Beef, be it the oven or the trill, the key is to cook it very, very slow. 250 degress for 11 hours and 40 minutes like I stated before. That's a little harder to do in the barbecue, but if you're really vigulant and are very careful not to let the temperature inside the cooking chamber go above 250 degrees, you may be able to do it. You must have a barbecue that has a fire box and a seperate cooking chamber, though. If you try to roast Corned Beef or any other type of briskit on a regular grill like a Weber, it will be as tough as nails. Measure temperature is very crucial for any tough cut of meat. That's why I allways do my corned beef in the oven. I have had excelent luck with rib roast and other roasts on the barbecue, but for Corned Beef, the oven is where it's at.

its' 11 hours and 40 minutes at 250 degrees in the oven, and 20 minutes int he oven at 350 degrees, for a total of 12 hours. If you plan to have dinner at 4:00 pm on Saturday afternoon, the meat must go in the oven at 4:00 aturday morning. The cabbage takes about 8 hours in the crock pot, and the baked potatos usualy take 2 hours on the grill, wrapped in aluminum foil.

The results, if done correctly, speak for themselvs.

Well, iHaunt, if you ever find yourself in Dwight Illinois on Saturday March 12th, you are more then welcome to join me and my brothers and sisters for Dinner.

I hope you like Irish music as much as you like Irish food, because I play a lot of it when I have my St Pat's party. You'll have to bring your own beer, however, as I never serve liquor at my house. Besides, I can't drink it becuse of my Gastric Bypass.

Ohh, that would be delightful! Thank you, Mike! :D I wish to visit you, but I have no time and other things to do so... And, for that music I can't hear because I am hard of hearing impaired (deaf), you know? But, I do enjoy Irish food and everything. ;)
