Be that as it may, I STILL like a good fresh ham smoked on the barbecue, or a good smoked ham for Easter Sunday.

Then I'm a ton of beef steak, pork steak, chicken, venison, bison, and a list of other critters.

I roasted a Rack of Pork for New Years Day dinner. A couple of my neighbors and a buddy of mine from the old neighborhood came over. We listened to Celtic music, however. Everyone was all burned out on Christmas music, and come to think of it, I am too. Oh, I'll probably pull out the Christmas records and CDs next November when I begin my Christmas house cleaning, but for now, I am perfectly content to listen to some old German folk songs like I'm doing right now while I write this post. I also plan to listen to some of my classic rock selections, and others.

Anyone like pork chittlings? Pork ears? Pork cracklings? Rinds? I love 'em all! ;)
